French and Portuguese in 1718. A bustling world seaport, it
quickly became the mother of all "melting pots" —
European, African, South American, West Indian and American Indian.
Those born to these multi-racial colonists were known as "Creoles"
(literally, mixed colors). The French-Canadians who settled in Arcadia
just West of New Orleans in bayou country became known as Arcadians
or "Cajuns". Serving the best traditional cajun and
